The cheeses of the world, sorted the way a cheesemonger sorts them: fresh, bloomy rind, washed rind, blue, pressed, cooked or stretched curd. A card's rarity is its measured renown, with mozzarella and parmesan at the top. The star marks the cheeses made without a drop of cow's milk: sheep, goat, buffalo. Cows give more than four fifths of the world's milk; the rest is rare. And no brands: a card names a cheese, never one company's product.
